Just read the article on MEN website. Apparently they don't have a team so they have guests for friendlies.

I suppose that means that we're essentially playing a world XI hopefully made up of some legends.

Yeah and it ties in with there desire to get a team for the US league.

Barca in friendly that day so doubtful Iniesta and Xavi could play (they've been quoted to saying they would be interested)

No. Singular nouns ending in s in almost all cases require another s following the possessive apostrophe. Certain Classical and Biblical names are the exception, but I would suggest that leaving off the s as a rule would be much more harmful than getting it wrong in these special cases.
