Thumbs up Roast belly pork, mustard mash and red cabbage

Here's my pre-season training

Roast belly pork, mustard mash, pickled red cabbage, crackling and gravy made from pan juices and red wine

how did you cook your belly pork? i'm a big fan even though it nearly got me booted from mf1. fantastic cut if treated properly.

can't say i've ever had red wine gravy with pork. looks good tho.

Brown it in the pan, lay on a rack or a trivet of veg and cover in foil and into gas mark 3 oven for a 2-3 hours so the fat melts

Crackling you can slice off and do under grill to get it real crispy
