I think the issue is with the cooking of stuff inside. If you leave it on the stove all the heat is directly from the bottom and without constant stirring you're likely to burn the stuff sat at the bottom. With the slow cooker the heat surrounds the stuff inside and it works by reaching a certain temperature then shutting down before reaching the temperature again and so on over the 6,7,8 etc hours you leave it for.

Leave it in the oven, not on the hob

I suppose it just the same as people buying deep fat fryers instead of just using a pan. Maybe it's more energy efficient too.
